*1c Coconut milk
6-8 Strawberries
1/2TBSP Cinnamon
2TBSP Flaxseed meal
1TBSP Chia seed(optional)
1/2 Maca powder(optional)
This is a very quick and healthy alternative to either cereal or my favorite cold muesli. Mix together you coconut milk, cinnamon, flax, chia and maca. Then dice up your strawberries and add them in to the mix. From here you can just eat cold, which is delicious on a hot summer morning. For a hot breakfast option(thanks to my good friend Maria Christian), heat your coconut milk, cinnamon, flax, chia, and maca on the stove in a pot on medium until nice and thick then drop in your strawberries. Now for more of a muesli effect, mix all the above ingredients up and let sit in the fridge overnight then pull out in the morning and enjoy.
*Full fat plain unsweetened coconut milk, I use the canned ones.

Kale Chips
Kale(1 bundle)
*1TBSP Taco seasoning
1tsp Salt
1TBSP Olive oil
Wash your kale and drain. Tear it from the stem and place in a large bowl. Drizzle with olive oil and then top with spices. Hand toss and make sure it gets well coated with the olive oil. Then place in a dehydrator for 8hrs. Once done immediately store in an air tight container.
*Taco seasoning: 1TBSP of ; cumin, chili powder, garlic powder, italian seasoning, red pepper flakes.
*You may also make these kale chips in your oven, I have just found that they do not stay crispy once they cool. If you are going to make these chips and immediately consume, then go ahead and bake them in the oven at 350 for 20 mins or until crispy.

Cucumber Salad
Ingredients:
4-6 cucumbers (if on the smaller size use 6)
1 green bell pepper diced
2 small cans sliced black olives
1/2 red onion diced
2-3 roma tomatoes diced
1/4 cup extra virgin olive oil
1/4 cup balsamic vinegar
Sea salt and pepper
First peel your cucumbers and cut into small squares. In a large bowl combined all ingredients and salt and pepper to taste. Toss until well mixed and serve chilled. Enjoy!

Chocolate Pudding
2 Avocados(ripe)
1 Banana(ripe)
1/4 c Coconut milk/Almond milk
*1/2c Raw cocoa powder
2 tsp Vanilla extract
2 TBSP Raw honey
1 tsp cinnamon
1/8 tsp sea salt
Combine all the above ingredients in the food processor and blend until smooth. Take out and top with blueberries and chopped pecans or almonds. Also a delicious snack all by its self.
*1/4 c Raw cocoa powder for milk chocolate and 1/2 c for Dark chocolate lovers.
* Lasts only about 2-3 days if stored in a well sealed container in the fridge.
