Pumpkin Pecan Pie "Oatmeal"


1/2 c coconut milk(full fat)
1/2 c pumpkin puree
*1tsp pumpkin pie spice
1TBSP sun butter or almond butter
2TBSP chia seeds (milled or whole)
1TBSP pure maple syrup

*1 egg (hot version ONLY)







I love anything pumpkin, especially in the colder months!  This no oat-oatmeal is just like eating a warm pumpkin pie.  You can mix all the ingredients together and eat as is or you can mix them in a small pot on the stove until nice and hot.  This is a quick healthy and very delicious breakfast.  When making it hot you can add in one egg and whisk until you get the right consistency that you like your oatmeal, this will give it a thicker texture and add in some more protein!  


*Homemade pumpkin pie spice
2TBSP cinnamon
1TBSP ground ginger
1/2TBSP allspice
1/2TBSP ground cloves
1/2TBSP ground nutmeg

Healthy Pumpkin Spice Latte

 
  1 c almond milk (any choice of milk/non-dairy milk)
  1/4 tsp vanilla extract
*1/4 tsp pumpkin pie spice
  2 TBSP pumpkin puree
  1-2 TBSP raw honey (sweeten to your liking)
*8 oz coffee


Combine on the stove top. Whisk together until well combined and hot.

Fall is my favorite time of the year for many reasons, and pumpkin spice latte is one of them!  Here is a healthy version of one , or if your like me its the only kind around.  Living here in South Korea this latte is non existent so in order to get ones fix I had to get creative.






*Homemade pumpkin pie spice                                            
 2TBSP cinnamon
 1TBSP ground ginger
 1/2TBSP allspice
 1/2TBSP ground gloves
 1/2TBSP ground nutmeg

 *8 oz of your favorite coffee, either regular or instant mixed with 8oz of water.  You could even do this with your favorite tea, I would pick a black tea something non flavored or chia spice flavored tea would work well also.
