No-tato Salad

1 head of cauliflower, steamed for 5mins(or if you have a pressure cooker, fill the pressure cooker only a 1/3 of the way and only let it whistle once then take off and immediatly place under cold running water). 1/2 of a red onion, diced. 2 hard boiled eggs pealed and chopped up. 5-6 small pickles diced small(or for a quicker add in use organic relish). 2 tbsp of mayo, 1 tbsp of spicy mustard, and 1 tbsp of yellow mustard. Salt and pepper to taste. Place all in a large bowl and mix. I use a spoon and a large knife to stire while chopping the cauliflower in to smaller bits. Place in the fridge for about an hour then serve and enjoy! This is a very yummy subsitute for potato salad. This is not an orignal, I origanlly got the recipe from Everyday Paleo. I just try and look for easier ways to make this, and I feel using either veganaise or trader joes organic mayo is faster and easier than making your own mayo at home like in the orginal recipe.
